AYE CARAMBA WITH SPICY GINGER BEER

  • 2 oz Gin
  • 0.5 oz lychee liqueur
  • 0.5 oz brine from Maille Gherkins with Cayenne chili peppers
  • 0.5 oz simple syrup
  • 1 oz lemon juice
  • 3 drops of Tabasco
  • 3 dashes of Fee Brothers Peach Bitter
  • 3 cherry tomatoes
  • 1.5 oz The Great Jamaican Spicy Ginger Beer
  • 1 Maille Gherkin with Cayenne chili peppers (to garnish)

In a shaker, muddle 2 tomatoes and add all ingredients except the Spicy Ginger Beer. Shake with ice. Using a strainer, pour in a martini glass. Top with Spicy Ginger Beer and garnish with a tomato and a gherkin.
