BARBADES COLLINS WITH SPICY PINEAPPLE

  • 1 oz The Great Jamaican Spicy Pineapple
  • 3 oz lychee juice
  • 0.5 oz freshly squeezed grapefruit
  • 0.5 oz simple syrup
  • 1 oz sparkling water
  • 2 drops Angostura bitters
  • Mint (for garnish)

In a highball glass filled with ice, mix all ingredients except the Spicy Pineapple. Finish with the Spicy Pineapple. Garnish with a sprig of mint.
