BARBADES COLLINS WITH SPICY PINEAPPLE

  • 1oz of The Great Jamaican Spicy Pineapple
  • 3 oz of lychee juice
  • 0.5 oz of freshly squeezed grapefruit
  • 0.5 oz of simple syrup
  • 1 oz of sparkling water
  • 2 drops of Angostura bitters
  • Mint

In a highball glass filled with ice, mix all ingredients except the Spicy Pineapple. Finish with the Spicy Pineapple. Garnish with a sprig of mint.
