CURRY UP WITH BITTER LEMON

  • 3 oz The Great Jamaican Bitter Lemon
  • 1.5 oz Cirka Gin Sauvage
  • 0.75 oz curry-coco syrup
  • 0.5 oz lemon juice
  • 1 arugula leaf
  • 3 cups water
  • 2 cups granulated sugar
  • 1 cup honey
  • 1 cup coconut milk
  • 1 barpoon yellow curry
  • 1 corn on the cob
  • Ice

To make the curry-coco syrup:
Cook the corn and take off the kernels. Add the water, sugar and honey to a small saucepan. Bring to a boil. Add 1 cup of coconut milk. Add 1 barspoon of yellow curry. Simmer for 30 minutes. Let it cool and strain.

Add all ingredients into shaker, except for the Bitter Lemon. Shake and fine strain into a coupette glass. Top with the Bitter Lemon. Garnish with an arugula leaf.
