THE ATWATER TUNNEL WITH TONIC WATER

  • 1 oz The Great Jamaican Tonic Water
  • 1 oz The Great Jamaican Ginger Beer
  • 1 oz of Cirka Gin Sauvage
  • 1 oz of Cirka Vodka Terroir
  • 2 pieces confit/candied ginger
  • 2 oz peach, cantaloupe, peppercorn shrub
  • 3 cups granulated sugar
  • 1 cup water
  • 1 cup white vinegar
  • 1/2 cup apple cider vinegar
  • ½ cup red wine vinegar
  • 1 tsp peppercorn

To make a peach, cantaloupe and peppercorn shrub:
Add to a medium saucepan the sugar, water, white vinegar, apple cider vinegar, red wine vinegar and peppercorn. Cut the peaches and cantaloupe into small pieces. Add the fruits into the saucepan. Bring to a boil and let simmer over medium heat for 30 min. Let cool and let sit in the fridge for 3-5 days. Strain.

Add all of the ingredients to a mixing glass. Add ice up to the rim. Shake and strain into a highball glass filled with ice and serve.
